Is there an activity log that shows activity (changes made by users) of history before the plugin was installed? I understand why this is seemingly hard but surely the data is there somewhere
No. There isn’t anything in WP core that records activities – you need to have a plugin installed beforehand that records actions for that to be possible.
There are page/post revisions, if that helps (assuming they’re enabled)
