Things I've tried:
Setting site icon in Elementor / wordpress settings.
Confirming favicon.ico is in root wp-content directory.
Resumbitting my sitemap to google, and requesting reindexing.
I am using a child theme if that matters.
Confirming that my favicon meets criteria, is 16 x 16, and is visibile at mysite.com/favicon.ico

What is the size of the site icon that you set inside of WordPress settings? Google requires that the icon be 48×48 or a multiple of that, like 96×96, 512×512, etc.
Post in the Google sub. If your favicon shows on the site, this has nothing to do with WP.
