Gutenberg not letting me update mobile UI (background color, text style, etc)?

This is what my dev is telling me. I simply want to update that background from gray to white and update the font type and color. Am I crazy? How is this not possible?

Would greatly appreciate any insight. 🙏 Noob here. 🙋‍♂️
