Have a semi-successful wordpress/woocommerce website; its time to do a v2.0; what are the best options to do this?

So I have been in business for about 5 years. Probably done a little over $2 million in sales and the website I have build has a ton of custom hooks and whatnot for SEO and other work. This all honestly could be redone upfront with a modern plugin or other feature, if I would of known what I really needed when I first started the site. My problem is obviously a lot of money is now tied up in the current website, but I want to rebuild from scratch for a v2.0 with all the knowledge I now have. What do you think the best way to do this would be? Do I need to create a complete new account? Pay for the full ECOMMERCE woo package? Run a sandbox somehow? Build out on a wordpress VM on AWS? What do I do here?
