How many sub-categories can you have under one categories?

So, basically like Red wine sub France, Italy and sub-sub category of countries is areas. How do you do that? Cause it’ll only shows 1 level sub category when i try it.
First – it depends on your setup. Vanilla WP let’s you add any number.
Second – it’s better to minimise them, for the users sake. There’s maybe 5 types of wine and 100s countries/areas… so making the wines categories (e.g. red, white, rose, sparkilng) and adding the same countries to each is madness.
You can create and assign a second set of categories, or, better – categories for wines and tags for countries.
