Page in Blocks Editor does not match Published Page

This is in my staging site that I’m rebuilding for a push to production.

I was doing some cleanup of my excess unneeded pages. Bad Idea. Somehow I trashed my actual cart and checkout pages. (rebuilding old site, lots of mixed pages, etc.). They are currently non recoverable due to the mess I’ve made trying to fix the problem. There is nothing fancy about these pages. My header, my footer, and the cart or checkout short code. That’s it. Recreating these should take about 90 seconds each and we’re back up and running. I keep recreating these and no matter what I do, they are not working correctly. I’m in the blocks editor now. I see the intended header, footer, and short code where they should be. This is using the default “pages” template. I publish the page, go to the page, and it has the theme default header, not my header.

If change the pages source template to the Cart template and refresh my editor page I have the correct short code and correct footer, but the theme default header and It’s not editable. It doesn’t show in the list of page content. If I then go to the cart template everything looks correct (right header, short code, and footer).

I’m at a complete loss and hopefully am being just an idiot about something simple. I’d much rather have that than have the alternative that I’ve really borked something up.
