The free GF Eway add-on can’t accept Apple Pay, due to limitations in the API used. The pro GF Eway add-on can use Eway’s Responsive Shared Page, where payment details are handled on Eway’s web server, and this can accept Apple Pay. Ask Eway to enable Apple Pay for your Eway account, and you can accept payments from the hosted payment page.
NB: the Responsive Shared Page can be used for processing single payments, but not recurring payments.
