ACF Masters…help!

So I have gotten myself into a pickle and am racing the clock on how to figure this out efficiently without wasting time and doing things wrong from the start.

I am taking on an overhaul of [this site.]) As you can see its a mess. They need organization. I know ACF is most likely the right way to go to reorganize these products but Im at a loss to figure out HOW to organize it.

At the core, each product has a COLOR. From that color, it applies to other categories (may be available in a few materials, some quantities, several flake sizes, etc).

There are several product MATERIALS (craft, polyester, hybrid, cosmetic, and biodegradable). Some of these materials have SUB-MATERIALS (polyester metallic, polyester fluorescent; cosmetic iridescent, cosmetic metallic, etc).

Within those categories, there are product FLAKE SIZES, and available product QUANTITIES (**bulk**: over one pound bags, 10 pound boxes, 25 pound boxes), (**jars**: 16oz, 8oz, 4oz, 3/4oz, mini jars) then sample bags in one size.

Anyone have any recommendations on how to organize this information most efficiently so that the correct flake sizes, quantities can be applied to the relevant colors/materials? Some colors are available in more than one material. Right now I have taxonomies for Material (with submaterials), Quantities (with bulk options, jar options, and sample bag options). Then just put each color/product name in as the Post?

It will also need to be able to have a filter page where the user can check their desired material(s), flake size(s), SPARKLE FACTOR (which will also be applied to each product; it represents how sparkly each product is on a one to five scale) , quantity(s), color(s), etc.

The amount of products on this site is huge and is a great example how messiness can compound when its not set up right from the start.

Right now on their site, its organized by each Products Name, Material, and often only one flake size and the user doesnt know about other relevant flake sizes or materials for that color. It will need to be one page for each product name, with Selection dropdowns for material available, which logic will then bring up the flake sizes and quantities available from there. Then if they change the material, those flake sizes and quantities will change to reflect.

I know this is a huge ask, I’m watching tons of YT videos trying to figure out how best to organize the taxonomies for a top down situation, what should be categories, what should be tags, or if everything underneath the Product Name should just be custom taxonomies input into custom fields. Learning as I go.

TLDR: how to best organize this product information in ACF? one parent product name with its corresponding available Flake Size, Quanities, Materials, Envelope, and then assign a sparkle factor /color to be used on a Filter page.

EDIT: Ive also realized just now that I have completely misunderstood. I thought that the custom fields (dropdown, checkboxes, etc) could be displayed on the Product Template for the user to use the dropdown buttons. If i understand correctly, its additional fields to categorize when creating each post. Essentially I can use the native Categories and Tags to query for the filter page I believe and may not need ACF at all?
