If you create a column called “number_phone_calls” the metadata will be created and saved for every user but it won’t appear in the customer list.
In “Extra profile” fields tab you can activate that those fields appear in the profile page.
Extending the customer list, as with any other admin report of WooCommerce is not so easy because you need to manage also JS (apart from PHP).
