I am trying to add microdata to a WP site and I cannot for the life of me find how to get to custom fields?! I'm used to coding from scratch so I have no idea how to access the head of pages within WP to add json data. Can someone talk me through it?
Google is no help as my WP doesn't have "three little dots on the right hand side" where I can enable CF.

Are you trying to juice the SEO with this data? Why not just use Yoast or Rank Math? Are they not adding enough?
