Advice on rebuilding site with active WooCommerce store

Hi, so we have a site that’s had a WooCommerce store since 2016. It’s a small corporate site with about 5000 orders, a thousand registered users, and 300 products with a total of about 3000 variations. The site was originally on Enfold and now is on Astra Pro and completely built with Elementor Pro.

It’s kind of slow.

The site owner would like the site rebuilt on the Kadence theme using Gutenberg with the hope of speeding up the site. He feels like the backend is a mess with too much CSS (a lot of it probably now unused) and JS, and thinks the the DB is probably bloated from all the plugins they’ve used and then uninstalled over the years.

Question:

1) Would it be better to rebuild the site from scratch (header, footer, sidebars, pages) and then import the tables with the users, products (after already rebuilding them with blocks), and orders once the site is ready to go live.

2) Or would it be better to simply start reworking the existing site page by page, product by product with Gutenberg. Then switch it over to Kadence and rebuild the header/footer over a weekend? Would there be a bunch of Astra and Elementor stuff left in the DB?
