Astra: starterTemplates or AI website builder for performance?

Hi everybody. I am working on setting up a website for a coaching business. For the beginning it should be mainly static information, event announcements and a blog.
I am following the guide on: https://wordpressadvisor.io/blog/how-to-make-a-wordpress-website-the-ultimate-guide-to-plan-and-create-a-fast-website

For the theme I have chose Astra. But after setting it up I am wondering whether I should stick with classical starter templates, or whether the AI website builder is a good idea?

Main concerns are: will the AI builder bloat the site and slow it down (which is what I am trying to avoid by following that guide and sticking to Gutenberg)?
Are there any GDPR concerns when using it – like at least me needing an order data processing contract with wpzip and mentioning it in my data privacy statement?

If it's fine to use it, I'd like the idea, so I can move on faster to other parts of my planned business and to blog content creation.
