Thanks for reaching out. It’s not possible to customize the information shown within the Site Kit dashboard, with the information shown within Site also output on the front end of sites for non-administrators.
There may be other plugins that do provide this functionality, although I haven’t checked specifically for customizable metrics shown to the public. You may find a public count view type plugin useful.
