Is there any way to add a featured image to all posts from a category, I’ve tried plugins such as “Categories Images” and added code to arhives/category.php templates, but when I try to share a post from that category, the displayed image is the site default logo. (Which is showed only when there is no featured image.)
Or is there a way for a post to copy the open graph of a main page/category?

“Feature images” aren’t what are shared on social platforms – you need to properly define the Open Graph image to do that, which you need to use an SEO plugin for.
Several SEO plugins will automatically set your featured image URL as your OG:image if you haven’t defined your OG:image – from memory SEOPress is one of those plugins.
