Thank you for reaching out! The email shown is taken from the connecting user’s Profile in WordPress, from the time the connection was made to Wordfence Central.
You can update the email shown in Wordfence Central Status in Wordfence > Dashboard by disconnecting and then reconnecting the site to Wordfence Central. Click Disconnect This Site and then Reconnect This Site to remake the connection. The dashboard will then show the current email set in Users > Profile.
