Actually, ignore that. The children taxonomies do appear. However, I’d like one dropdown that only shows the parent level and a separate dropdown for the children only. How can I achieve this? Not seeing any options for parent/child taxonomies in the settings when adding an item to my filter set. Thanks!

Thank you for your interest in the Filter Everything plugin.
You cannot separate the categories on parent and child ones to make two filters from them or more (at least so far). You can create only additional custom taxonomies in order to create more filters. Or you can create Custom Fields as well.
