No, the selected default Scheme will not be applied to all the post types. It will only be applied to a specific post type that you are currently selecting on the Titles & Meta settings.
So for each post type (Post / Pages / Products / CPTs), you need to set a default schema for them:
By default, post and pages are set to Article schema type and Woocommerce Product schema for the product pages so you don’t need to worry about selecting the recommended schema type.
