Critical error out of nowhere

My woocommerce shop has been running smoothly for 6 months and suddenly I’m suddenly getting a critical error.

I already tried deactivating Woocommerce and a bunch of other plugins, as well as switching themes, but nothing works. And of course made sure everything is updated. See error details below
