Custom Checkout

Hello so i want to have a custom Checkout where the client ONLY adds name and email nothing else. I’ve tried some different ways but doesn’t seem to work 100% as i want it.

Any easy way to implement this without causing any problems and without plugin?

If plugin is a must what would you recommend, cuz iknow the checkout and cart is sensitive so don’t wanna play with to much.
