Custom Nav Walker

Is there an easier way to create a custom nav walker? I tried using the default walker class but it doesn’t quite work as intended, particularly for menu depths greater than 2. The problem is any sub-menu with a depths more than 2 gets wrapped inside the previous depth and not appear below / next to it. I get I can use the override methods to create a more custom nav menus but I find it awfully (unnecessarily) complex.

I’m wondering if there is a more popular / easier method on building custom nav menus, or do I just keep at it until I finally get it? I’ve spent close to 20-25 hours figuring this out and although I am making progress in understanding the concept, I’m struggling to accept this has to be so complicated.

How are you guys building custom nav walkers? Or are developers just using theme builders nowadays? Any tips for making this easier?
