Okay, so a client wants a plugin similar to this [https://wordpress.org/plugins/give/#description]) I have a rough idea of what I need to do, but before we even start anything he wants some kind of a roadmap /bullet points of rough tasks and I haven’t done that before this. Is there any tutorial or some sort of guide on how to write that? I thought that I should divide that work in stages. The first one being the mvp that has just the bare functionality of donations and after that implementing all other stuff that the client wants. I still didn’t send him the proposal of hours needed, what would be your estamate for this kind of project?

No one will be able to give you an accurate answer on how much they would charge for that, take the time, sit down, and go through each feature you need to be build, and estimate how many hours it will take you. Then multiple them all by 25%.
As for the roadmap, there’s are 1000’s of resources online on how to structure and write a roadmap, there is no real right way or wrong way to do it.

Unclear why you are reinventing the wheel here. Why does the client need a custom donation vehicle other than the already existing plugins provide?
You get into a whole lot of data security, transients, hashed data storage, sessions, entry storage, email send functionality, admin dashboard pages, payment processor integrations, api’s etc.
My estimate would be to recommend an existing solution from a 3rd party, and scope the implementation of the integration and leave it at that.
Are you prepared to support this custom plugin forever? What skills do you have as a developer? Is this project even in your skill set?
What legal liability coverage do you currently have in instance of massive data breach when a vulnerability is inevitably discovered?
