Once your catalog has been set up, all that remains is a full product sync. In most cases, all products will have already been synced when the plugin is first connected to Facebook.
To disable auto-sync for new products, you can uncheck the following option in the plugin’s settings.

You know, I had looked at that and didn’t think to use it in this way. I took it as a ‘enable the plugin to publish updates’ not a ‘disable automatic updates’.
I found the text a bit misleading and un-intuitive.
