Only way I can think would be if something else is somehow forcing editor for all post types, or if you potentially have the same post type being registered elsewhere and it’s overriding the CPTUI version.
I just confirmed that unsetting “Editor” should be removing it. My local has a “movie” post type that only has title and featured image enabled.
Hi. Silly me. I just realize that I convert that post type over to ACF. Once I unchecked that box there, it disable the text editor.
