If I understood correctly, you are referring to the plugins details, right? If so, please note that we store the shop and document settings within the order once the PDF invoice has been created, therefore, you will only see the latest settings in a new order. This work this way because if you have to update your settings later, e.g. if you change your shop address, it should not affect old orders, since it is illegal in most countries.
That said, if you are still configuring the plugin, you may want to see the latest settings always, until you finish setting the plugin up. For your specific case, you could try enabling the Test mode, under WooCommerce > PDF Invoices > General > Test mode:
Do not forget to disable the Test mode when you have finished configuring your plugin’s settings!
