It works fine in the backend but NOT the front end.
I tried changed back to WordPress twenty twenty four theme and deactivated all plugins except yours and the issue persists.
I tried different formats for the date in the WordPress general settings but none of them resolved the issue either.

OK so I tested the plugin on a new staging site with default WordPress theme and no other plugins and that date field worked correctly. So any ideas how I can fix it on my live site would be appreciated.
I’ll try adding plugins to the staging site that are on my live site and see it I can narrow it down but I would think with them all deactivated it would not have had the issue.

@jimk1416 We’d like to inform you that the third party plugins are causing this. Please disable the third party plugins and delete our plugin and install it again .

Turns out all the plugins I was using were OK. Removing them all did not resolve the issue as I said before.
BUT, when I deleted the WP Events plugin and reinstalled it the issue WAS resolved. So kind of weird.
