Theoretically yes. You can do it with the PRO version, placing two filter sets on the page, and using include/exclude functionality.
Practically, it is not the best approach. Besides, parent categories will show all of the items in chield ones.
Use ACF to separate everything on custom fields and that would be the best approach. Or product attributes if you are using Woo.
