I don’t want to pay subscription for the time being, and I would rather focus more on building a platform. I want to a run a very simple website for my shop (no plugins or self hosting). Is it possible to create a catalog/inventory of all the items that I have in a creative way using the free hosted website in WordPress?

Sounds like you’re talking about [Wordpress.com]), which is different to “WordPress”. [Wordpress.com]) does not allow plugins on their free plan, so no, you can’t maintain any sort of shop.
I’d highly recommend you migrate your site to any other host (who use the free, open source version of WP) that does not contain any restrictions/paywalls.
It’s unclear if you have a budget or not
