I had a domain through namecheap and used their EasyWP shortcut to built my site using Semplice. I cancelled my namecheap renewal last November and have just found out the WP site gets deleted after 30 days. I don’t believe I have a back up (I know how stupid this sounds). Does anyone know if there’s ANY way I can get it back? Seems hard to believe that namecheap would delete something hosted through a different site?

This does not sound like you hosted the site somewhere else. If you used their EasyWp option then you installed it on their server. Further Semplice seems to be a theme or plugin that you install not a host (I could be mistaken but I didn’t see anything about hosting on their site).
If your hosting was cancelled last novemeber I doubt there’s much to be done doubt anyone would store files that long. You may be able to use wayback machine to get some content images back. You’ll still have to manually enter it all back.
I would contact namecheap as the first port of call because they are the only ones who’d know if they have a backup that can be restored if you sign up again.

EasyWP is powered by namecheap as a subsidiary business. EasyWP is also not free.
If you cancelled your renewal and are not paying for managed wordpress through EasyWP then yes… your site is gone forever.
Not sure why you think a business would host unused data for 2/3rds of a year for free.
Wasn’t there a way via waybackmachine to go and see the old site. This could help you see a copy to rebuild
