How can I add functionality to log/write information such as https://www.tracemyip.org/ together with time/date, into a textfile on my server?

I’m interested in (mostly) logging this to a text file: ip adress, country/region, browser, os, screen resolution, ip user agent, refererer and such information – can this be done using a simple php snippet?

I’m not too happy about a plugin, because it annoys me with all the “spam” I already get (plugin developers trying to make me upgrade to a full/paid version), countless plugin updates and notifications and prefer a simple script that I can maintain/modify myself, maybe in php or similar? Please let me hear your thoughts, thanks!
