So part of my plan of what I want to do is not only develop my own WordPress sites, but take control of websites that other 3rd party devs have made by having the client transfer hosting to us.
So this would include migrating/downloading/uploading their files/databases/plugins, etc. and then editing their designs and so on.
But I want to practice this a fair few times just in order to get the hang of things before doing it for real. I don’t want to make unnecessary mistakes on a real client’s site.
Is there a way to get my hands on “open source” wordpress websites in order that I can upload/edit them for practice? Is there any other way I can practice this as if it were a real website transfer scenario?

Don’t think too many people will give you backups or snapshots of their site.
What’s wrong with installing and modifying fresh installations of WordPress?
Install a theme, add some fake data and you can practice your heart out.
If you can’t work with fresh installs then a backup of a real site isn’t going to be much use.
