Let’s say I have an old WordPress magazine theme from a few years ago that hasn’t been updated. It seems to work well and I don’t know of any issues but I want to make sure the code is current with newest WordPress updates. I assume it would be much easier to just send the theme to a developer than have them create a new one from scratch.
How difficult is it to update a theme? The theme is modern-looking and relatively minimalist.

There is no generic answer to that… It depends mostly on the plugins the theme is using. I have had troubles with themes using specific blocks for wp bakery editor and not updating these blocks making them not compatible to recent versions of wpbakery, therefore not compatible with recent versions of WordPress and php…
