Once you create redirections from default category pages to your new category pages, the default ones will not be indexed as Google will find a redirect when they crawl those pages.
However, to make sure that they are not included in the sitemap and submitted to Google, you should mark them as Noindex in WP Dashboard > Rank Math > Titles & Meta > Product Categories > Category Archives Robots Meta.
You should also disable the Include in Sitemap option for WP Dashboard > Rank Math > Sitemap Settings > Product Categories.
