How to block google/external fonts in backend?

I was asked if wp can be used in gdpr sensitive environments. while it’s no problem to remove google fonts in the frontend and eventually event prevent w.org being called for some stupid eicon.

But the backend….dashboard and profile page might or might not load google fonts depending on plugins and other stuff installed.

This is an absolute no for most gdpr sensitive projects.
One might grep through all folders and remove the word google completly and maybe use bettersearch&replace aswell.

Is there a more “usefull”/sane solution to keep using wordpress without ever sharing data with america?
