How to make a list of all PAGES in a single category

I'm trying to create a page that has a list of all the pages [not posts] from a single category [using the plug in "Pages with category and tag"]. It's for an outdoor guidebook so here's an example:

Hiking Page

  • Hiking Title 1 [Link to actual page]
  • Hiking Title 2
  • Hiking Title 3
  • etc.

Ocean Kayaking Page

  • Kayaking Title 1
  • Kayaking Title 2
  • Kayaking Title 3
  • etc.

So each activity page acts like a menu [not interested in a sidebar menu] for a given activity. It was easy to do in Joomla but seems surprisingly hard to achieve in WordPress. I can find plugins that will do what I want with posts but not pages. I have a different purpose for posts. I'm sure I can do it manually but — Yikes! — why would I?

  1. Pages don’t have categories by default and as I’m not familiar with the Pages with category and tag plugin or how it implements categories for pages I can’t advise without reviewing the plugins code. Have you considered contacting the plugin author for help on this?

    Also, are you even sure you need to implement categories for page in the first place?
