I have a one-page site that does not have any other content no pages or posts but when I check XML Sitemap it displays 3 sitemaps two are empty and one has the page that I am using, should I delete the empty ones?

They won’t do any harm if you leave them, and if they were generated automatically, they’ll probably just be generated again.
I would just leave them be.
