The image you see in the cached version is most likely coming from a hotlink protection that is enabled at your webhost level. If you are using Plesk, then please look for hot-linking protection and disable it. After that, the URL cached by Google should work just fine.
This is not related directly to the ShortPixel Image Optimizer plugin and it happens because the cached version is obviously served from a different domain, which is what hot-linking means.
