Here is the group for everything shown above (if it even matters in this case).
When I first started, I didn't design my website with mobile in mind. Is there a quick fix that doesn't require me to install more plug-ins like Elementor? I've seen that Elementor can help with this, but I started with the hope of not having to install plug-in after plug-in (trying to run as lean as possible). However, if Elementor is the quick fix in this case I'll do it.
That said, is there a quick fix in order to keep the Desktop version the same but fix the mobile version?

You shouldn’t need to install anything else to get at least basic responsiveness working, even with the clunky Gutenberg block editor.
It looks like you need to go in and use the block editor’s “responsive view” tools to fine-tune your margins and possibly font sizes for each major screen size.
That should dramatically improve that single column of characters look in “phone” view, for instance.
You don’t need any plugin to make the site responsive, and there is no plugin that can automatically make a site responsive.
As long as you aren’t using a crappy theme, a lot of what you need will happen automatically, and the rest should be just a matter of using the built-in functionality of WordPress.
There is not a quick fix. This is a failure to understand intermediate (and a few basic) web development principles.
Take your time and learn what went wrong, how to fix it, and most importantly how to develop with responsiveness in mind from the beginning for your next project.
