In the translation that appears at 100%, it appears in Spanish well translated but it is not applied when the mail is received.

You can change the Track Your Order text to Spanish from the custoizer.
Navigate to WooCommerce > Shipment Tracking > Settings and from the Fulfillment Workflow panel click on the settings icon.
From here you can change the text of the button to Spanish.
