It looks like you’re looking at the incorrect RSS feed. The feed link you shared is the WordPress-generated RSS feed for the podcast post type, so this would be why the media prefix was not added.
You’ll need to use the RSS feed generated by Seriously Simple Podcasting which is https://notquitewritepodcast.com/feed/podcast/
If you right click and view source, you’ll see that the media prefix is appropriately added to the episode’s enclosure URL.
