It’s WooCommerce that’s adding the “Payment Methods” tab on the My Account page. Probably the easiest way to add your icon is to see how your theme is doing it, and then copy that process. Your theme is probably rendering the icon using css so you can just target the payment method tab that way.
This isn’t something that’s controlled by the Stripe plugin.
