You can switch between the old and new product editor by going to WooCommerce > Settings > Advanced > Features and then under Experimental features you can enable or disable the new product editor. Don’t forget to save the changes.
Please note this is a beta feature, so it is still on test period.

However it is incompatible with my Yoast plugin, perhaps it will work in the future.
