There are quite a few Gutenberg issues relating to improving the Table block. You can see a collection of them through this tracking issue.
With regards to column widths specifically, there is one issue. So it is on the radar. The catch though is the Table block will need a very large refactor to achieve a lot of these enhancements which makes it very hard to predict when they may be available.
