Ok, what version should I freeze on and disable auto-updates?

Hi, I’m an independent creator building a new website. Other than writing a boatload of code that I’m not sure I can do, (I can code a bit but I’m not a dev), WordPress and ACF Pro is the only setup that suited my needs for building what I want. I just started using it at the bringing of October, am not even finished setting it up how I like it, and then noticed all this drama…

So I’m wondering if it’s reasonable to pick a WordPress version and freeze it (I mean, disable auto-updates) before they start pushing updates that mess with ACF Pro?

And in the mean time… guess I need to start looking for an alternative. Geez.
