only display certain categories on homepage?

Hi, I have a travel blog with different trips organised as categories. I want the blog’s homepage to only display the latest/current trip.

Right now I am using the “Ultimate Category Excluder” plugin which does what I want, which one caveat: I tell it to EXCLUDE categories, but I can’t tell it to ONLY INCLUDE certain categories. The end result is the same, but as the number of categories increases, I’ll always have more and more categories to tick in order to hide them.

Is there a better way to only show a certain category in my homepage?
