As I alert in the plugin description: This plugin was specially designed for “Brazilian stores”, but it can be easily adapted (with hooks) to meet other needs. So, you should ask or pay a developer to help you with that taxes part.
The simulated shipping package can be easily modified using the wc_shipping_simulator_package_data hook. More details in the source code.
