Please try reinstalling the plugin’s fonts under WooCommerce > PDF Invoices > Status tab, by clicking on the Reinstall fonts button. Then, try to open an invoice and check if it looks good.
Regarding the logo, did you add it after creating that PDF invoices? If so, please note that we store the current shop settings within the invoice data at the moment of its creation. We do this, because you could update your business details in the future, e.g. the address, VAT Number, etc., but this should not affect previous documents, since this is illegal in most countries.
That said, if you are still configuring your store, you can enable the Test mode temporarily, under WooCommerce > PDF Invoices > General, while you are making tests, but please do not forget to turn it off after you finish.
