It looks like updates aren’t taking effect and the product details are reverting to the original state. I tried duplicating a product from my end while using the latest WooCommerce version and was able to duplicate and save the product with no issues.
Though you’ve mentioned that you’ve tried disabling all other plugins and used a default theme, I would recommend you to clear your browser and server cache after making these changes. Sometimes, old cached data can prevent new changes from being displayed correctly.
The price discrepancy issue can also be due to cache problems. Please ensure that you’re clearing your cache after each update.

Thank you for taking a look at this for me 🙂
It worked fine for a while, but after adding several products (using the duplicate product option) that’s when the problem started.
With all plugins disabled (including cache plugin WP Rocket), the probelm persisted.
I made a staging copy of my site and on the copy I was initially able to duplicate and edit products, but the problem came back after a few products were added.
Is it possible it could be an issue with the Woocommerce database update?
I’ve never had this issue with previous versions using WP Rocket for caching… and I tested with the cache disabled as well.
My store is live, so I’m hesitant to update Woo to 9.3.1 right away.

I’ve contacted my host and there’s a server side cache that I’m unable to manually clear myself.
They’ve cleared it for me and it seems this has resolved the issue!
I’ll repeat the product duplication test a bunch of times to check that it’s now fine.
