Proper and efficient way of building WordPress website in 2023?

Hi,

I have been building custom wordpress websites professionally for many years until 2017. Back in the day, I was mostly building custom child themes using Genesis framework and polylang plugin for multilingual, sometimes Visual Composer (which I didn’t like because it often had breaking updates over the years), Beaver Builder, but prefered the standard WP editor because it would never break.
I was away from the dev. world for some years now, and see that many things changed, especially with the introduction of FSE block themes.

I need to launch a new site this year, and to be honest I am a bit confused with recommended way of building wp sites nowadays. There seems to be various popular themes that use seemingly incompatible technologies some use gutenberg blocks, some are FSE, some are Elementor, some are Visual composer, Beaver Builder etc. Many of those builders look very bloated and set you up in vendor lock in.

The website I am building needs to last many years and require the least amount of plugins possible in order to simplify maintenance and unsure it doesn’t break with time.

So far I played around with the Frost theme and Twenty Twenty Four, and a bit confused with the setup since it’s completely different from the old school way of customising child themes. Also, I am confused about how to develop my FSE theme customisation locally, version control it, before deploying to production.

What kind of workflow/stack is recommended in 2023, for fast and efficient dev time, while not reinventing the wheel ?
