You’ll need to remove the Uncategorized from your breadcrumb structure data to remove it from SERPs:

If you want to remove the category Uncategorized from your breadcrumbs on a single page, please share the URL with us here. Or, if you want to remove the category Uncategorized entirely from all of your posts, you can simply change the category from the editor and choose any other relevant category for your posts/pages.
