This is something you can achieve using the customizer, included in Premium Templates. This extension allows you to add custom blocks, that you can use to display extra info on your PDF documents.
For your specific case, you can use the {{used_coupons}} placeholder, to display on the packing slip the coupon(s) applied in the order, like this:
This is a custom block example. You can use any of the available placeholders here, but also HTML code, and custom placeholders to display custom fields. In addition, you can set conditional logic within the advanced settings, like displaying the block only if the order has a specific status or payment method.
